Tropical Fruit Trifle

Makes 8 Servings

1 package (106 g) instant low-fat vanilla pudding
2 cups low-fat milk (1%)
2 kiwis, peeled and sliced
1 large banana, peeled and sliced
1 cup sliced fresh strawberries
1 (9-inch) angel food cake, broken into 1-inch pieces, divided
2 tbsp coconut flavored rum, divided
1½ cups light whipped topping, divided
¼ cup sweetened shredded coconut, lightly toasted

1. In a medium bowl, prepare vanilla pudding, using milk, according to package directions. Set aside.

2. In a separate medium bowl, toss together kiwis, bananas and strawberries. Set aside.

3. In a large glass serving bowl, place half the angel food cake pieces along the bottom of the bowl. Drizzle 1 tbsp coconut rum over cake and spread half the pudding over top. Spoon half the fruit mixture over pudding. Top with half the whipped topping.

4. Follow with a second layer starting with the remaining cake, followed by the remaining rum, pudding and fruit. Top with remaining whipped topping. Sprinkle shredded toasted coconut on top. Serve
